Mint is awesome. Mint in the summer is awesomer. You can add it to anything anytime, and it will make it brighter and fresher.
I had bought these gorgeous-looking strawberries at the market, and I was in the mood to make something with mint. Because, you know, mint is awesome. (You see my point?) I found a strawberry-mint sorbet recipe, but, alas, it was raining outside. I felt making sorbet would come off as trying too hard. So I settled for this salad. Or should I say ‘thought I would settle but was wowed instead’? I should. Definitely. Beau-ti-ful salad. And so fresh, and so tasty.
The secret ingredient might have helped… I should point out that at the time I made this recipe, I was trying to snap out of a fairly resilient mojito obsession. There you have it, the genesis of the strawberry-mint-lime-rum salad. Or should I say strawberry mojito salad? I should.
Strawberry mint salad with lime
Prep time: 5 minutes
- 1/2 lb strawberries
- 1/2 cup fresh mint
- 1/2 lime
- 1 tbsp (or 2…) rum
1. Rinse and halve the strawberries. Juice the lime and pour on the strawberries.
2. Roughly chop the mint, add to the salad. Add in rum and stir gently. Serve chilled.
- You can let the rum infuse the strawberries for 30 minutes to 1 hour, in a sealed container in the refrigerator.
- You may want to add 1 tbsp cane sugar (to embrace the whole “mojito placebo” theory), but I like my fruit salad more on the tangy side.
